Miso Tahini Dressing

This is cribbed from this recipe from Smitten Kitchen with the adjustments that I usually make, but its great with many grains. This recipe is very good, I always make it with additional crispy chickpeas (fry in olive oil on medium high heat for about 8 minutes, add in za'atar at the 3 minute mark) and whatever other root vegetables I have around.

Ingredients

Miso - 2 tbsp Tahini - 2 tbsp Garlic - 1 clove Ginger - 2 inch piece Rice vinegar - 2 tbsp Honey - 2 tbsp Olive oil - 2 tbsp Sesame oil - 1 tbsp

Instruction

Grate the garlic and ginger into a medium sized bowl. Add in all other ingredients plus ~2 tbsp water and whisk (really mix your tahini before dumping some in. It is a big bummer to get to the end of the jar and find it's rock solid in the bottom of the jar). Whisk until smooth: it will get gummy before it thins out.

Add in more water incrementally as needed to thin it down to the consistency you'd like. I usually need to add a couple splashes to get it where it needs to be.
