Coconut Rice
This is very simple coconut rice made with a can of coconut milk.
Ingredients
Coconut milk (14 oz can) Jasmine rice (2 cups) 3/4 cup water Salt
Instruction
Place jasmine rice in a pot. Put in a little water and rinse, then drain as much of the water as you can. Repeat til it's clear water, at most a couple more times. Add in the can of coconut milk. Pour 3/4 of a cup of water into the coconut milk can and swish it around to get anything left over, then add to the pan. Add in 1 tsp of salt.
Put pan over high heat, mixing every so often. Once it comes to a simmer use a flat bottomed wooden spoon to scrape the bottom of the pan to make sure nothing is scorching. Reduce to the lowest heat, put a lid on it, and do not open it for 14 minutes.
After 14 minutes turn off the heat, take off the lid, and fluff the rice with a fork. If there's still some liquid in the pan mix it up and leave it open while it steams.
